 Recipe Instructions
  1. Slice the tomatoes in half. Rinse and slice the squash on the bias. Shuck the corn and remove the kernels from the cob.
  2. Place the a pot of water on the stove and bring to a boil, add the ravioli to the boiling water and cook for 3-4 minutes.
  3. Dry and season the scallops with salt and pepper.
  4. Heat a saute pan over medium high heat, add the oil and then place the scallops in the pan.
  5. Cook the scallops for 2 minutes on each side. Add the bacon and the sliced onions to the pan.
  6. Next add the squash and cook for 1 minute.
  7. Add the corn, spinach and tomatoes. Continue to cook for 1 additional minute.
  8. Deglaze the pan with the wine and season with salt and pepper. Drain the pasta and toss with the sauce and mix in the butter.
  9. Arrange the spinach into 4 piles, place the ravioli in between them.
  10. In the center of the ravioli pour the scallop sauce.
  11. Garnish with Parmesan and serve.
